Granola Bars, not just for breakfast!

Golden Rule Mini Cheesecakes

I have another way for you to incorporate Please & Thank You Granola Bars into a dessert! Coming soon I'll share my favorite granola bar wine pairings ;)


What’s the best part of having a dessert? Is it the balance of flavors, quick hit of sweetness, or that satisfying “oooooh”? Or maybe it’s when all of that comes together into one bite of straight-up goodness. I think I have that bite for you.


This dessert includes our best-selling granola bar, the Golden Rule (coconut, chocolate, white chocolate) and a super easy no-bake cheesecake. What could be better than that?!


I found my no-bake cheesecake recipe here https://thefirstyearblog.com/no-bake-cheesecake/ and then altered it just a bit to make sure the flavors balanced well. The big thing here is to REMOVE the lemon or lime juice, it doesn’t go with the granola bar. The other option for a lighter, quicker dessert, is to check out the option to replace the heavy whipping cream with cool whip.


Using a mini cupcake pan, divide your Golden Rule granola bar into quarters. Mold each quarter into mini crusts. Press it around until it fits nicely in the bottom of the cupcake tin. Place your pan in the freezer for 15 mins to set the crust as you make the filling.

Following the recipe from the above link, or using your favorite cheesecake recipe, make your filling. Scoop your filling into the cupcake tins and level off. Cover with foil and place in the fridge (not the freezer) to set for at least 6 hours or overnight, if preferred.


Once you are ready to serve, remove from the tins and sprinkle just a little bit of cinnamon over each mini cupcake.


Final and most important step, take a bite of your dessert: savor the moment, the flavor and go “ooooh” that tastes good 😉
